Hi there! Have you ever wanted to make bourbon brownies? How about bourbon brownies infused with cinnamon and ancho chile powder?

Ingredients:

  • 1 ¼ cups sugar
  • 2/3 cup all-purpose flour
  • ¼ tsp salt
  • 6 ounces (approx. half a bag) of dark chocolate chips.
  • 11 tbsp (1 stick + 3 tbsp) unsalted butter
  • 2 eggs
  • 3 tsp bourbon
  • ¼ tsp ancho chili powder
  • ½ tsp cinnamon
  • Vegetable/canola oil spray

Tools:

  • 9x9x2 baking pan
  • Spatula
  • Aluminum foil

Note: If there’s anywhere you want to splurge, it’s on your chocolate chips. I love Callebaut, but Guittard, Valrhona, or Scharffen Berger will do just fine. For a rich dark chocolate flavor, choose a chocolate that is around 60% cacao.

Preparation:

1.     Position oven rack in the middle of your oven and preheat to 325. Cut a piece of aluminum foil to fit an 9x9x2 pan, leaving a 2” overhang. It doesn’t have to be exact, you’re just going to use this to easily remove your brownies later. Spray the foil with

2.     Spray a piece of foil with vegetable oil and use a paper towel to make sure it’s evenly covered. Place this in your baking pan.

3.     Melt the butter in a medium saucepan over medium heat. The butter will foam. Cook, stirring continually, until it starts to turn brown and brown bits start forming on the bottom of the pan. This will take approximately five minutes.

4.     Remove the butter from the heat and add vanilla, salt, bourbon, sugar, and chocolate. Mix until uniform. Let the mixture cool for 5 minutes.

5.     Add one egg to the mixture. Beat it vigorously with your spatula. Repeat.

6.     Add flour, cinnamon, and chili powder. Stir until the ingredients have all been mixed together well.

7.     Pour into your pan. Bake for 20-25 minutes. When the mixture is done, the top of it should look set and dry.

8.     Remove from oven and set on a rack to cool. When cool, remove the foil, flip it over, and slice.

Food Fact: The first brownies were created by a chef at the Palmer House Hotel for the 1893 Chicago World’s Fair at the request of the hotel owner’s wife. She wanted something that the women at the fair could enjoy without getting their hands dirty.
